Steaks can be grilled, fried, barbequed or roasted. If left rare the meat remains even more tender.  

These are portion sized steaks taken from the upper back leg of the animal, the haunch carries the most flavour. The meat is dark, lean and very tender. Wild Venison is much richer than farmed venison.  

Venison is a healthy option as it is 90 % fat free, high in protein, low in cholesterol, providing a good source of zinc, iron, selenium, and omega 3 fatty acids.  

Vension is becoming increasingly more popular.

Ingredients

FLASH-FRIED VENISON STEAKS NUT PINENUTS & RAISINS

  • 4 Venison Steaks
  • 2 teaspoons black peppercorns, ground
  • 2 tablespoons olive oil
  • ½ glass red wine
  • 5 juniper berries, crushed 

 

For the sauce

  • a large knob of butter
  • 60g raisins, soaked in hot water for 30 minutes
  • 3 tablespoons pine nuts
  • 1 teaspoon redcurrant jelly
  • 1 teaspoon red wine vinegar
  • 1 glass red wine  

Marinate the Venison Steaks in the pepper, olive oil, wine and juniper berries for half an hour 

To make the sauce, melt half the butter in a frying pan over a medium–high heat and fry the drained raisins and the nuts for 3–4 minutes until the nuts are lightly toasted.  

Remove the steaks from the marinade and add the marinade and the rest of the sauce ingredients to the pan. Simmer for 15 minutes until you have a lovely rich sauce.  

Meanwhile melt the rest of the butter in a smoking hot, large heavy frying pan and cook the steaks for 2–3 minutes a side; the amount of time they need will depend on their thickness. Venison is best eaten pink in the middle, so err on the side of undercooking – you can always put the meat back on the heat if it is too pink for your liking.  

Pour over the sauce, simmer for 1 minute and serve.
